Pecan Meltaways

This recipe I have made for many years.
It is very easy to make and they do melt in your mouth.
This recipe came from a magazine.


Give them a try. 

You might not feel they need to be rolled in sugar or you could even roll the cookies in
icing sugar if you wanted 



Pecan Meltaways

1cup (250 ml) butter at room teperature
1 cup (125 ml) granulated sugar
1 tsp (5 ml) vanilla
2 1/4 cups (550 ml) all-purpose flour
1/4 tsp (1 ml) salt
3/4 cup (175 ml) finely chopped pecans

1: Preheat oven to 350F (180C). In a large bowl, beat butter with 1/2 (125ml) cup sugar and vanilla until fluffy. Beat in flour and salt until combined. Then stir in pecans until well mixed.

2: Roll into 1-inch (2.5-cm) balls and place on ungreased cookie sheets about 2 inches (5 cm) apart. Bake for 10 to 12 minutes until cookies appear set (their colour will not change much). 
Remove cookies and cool on a rack. Pour remaining sugar in a flat dish, and while cookies are still warm, roll in sugar.

Simcoe Christmas Lights

We saw the Simcoe Christmas lights last weekend and the weather was milder than most winters and no snow.
We wanted an outing as a family to enjoy the light display.
